Deep-frying. Wood-smoking. Sous vide. The mind-numbing number of suggestions for mining flavor from the typically unforgiving Thanksgiving bird have proliferated in recent years.

This year, leave them all behind.

For tasty fowl on Turkey Day, the new thing can be the old thing: a classic one-two punch of an overnight brine followed by a quick morning rub before the bird goes into the oven for a slow roast.

The good news is that while the process requires a little planning, little hands-on time is needed. And the payoff - white meat that doesn't need a gravy bath to be choked down - is worth it.

The 2008 pinot gris has been released at Greenvale Vineyards on Wapping Road in Portsmouth. It's described as a wine loaded with fruit aromas and flavors, and soft on the palate with a smooth finish.

T-Day party starts early in Plymouth


Ready for Thanksgiving? Well, if you need to get in the mood, head to Plymouth - America's Hometown - this weekend.

Tomorrow at 6 there's a free Patriotic Concert at Memorial Hall and on Saturday there's a parade on the waterfront at 10:30.

All along the waterfront Saturday there will be crafts and such on Saturday.

Take your mashed potatoes to another level with garlic roasted in simmering oil and fried fresh sage. A potato ricer or food mill produces especially smooth potatoes, but if you don't have those you can just skip ahead to the mixer step.
