Despite swine flu scare and America's traditional love affair with beef, the pig seems to be everywhere

The president of the National Pork Producers Council - the person who represents the people who represent the nation's pigs - appeared recently before Congress to talk about sales in the swine flu era.

He wasn't happy. "Things look bleak going forward," Don Butler told America's lawmakers.

Around the same time, the following events transpired: The usually beef-and-beany Taco Bell erected signs at the mouth of its drive-thru lanes, exhorting motorists around the republic: "TOP IT OFF WITH BACON."

Uncle Jack's, one of New York City's signature steakhouses, put out its sidewalk chalkboard of dinner specials. Getting top billing at the beef emporium, for $24.95, was not sirloin, not rib-eye, not filet mignon, but slow-roasted Berkshire pork shank.

Make your own cheese and chocolate


So, you want to make your own food? How about chocolate and cheese, and right in our own backyard, too.

Every Thursday through the end of the year you can get a beginner course in chocolate making at Newport Chocolates on Williams Street in Newport. Classes run 6 to 8 and cost 35 bucks. You'll go home with a box of handmade chocolates (that they prepared) and a recipe. 401.841.8975

For cheese, the Narragansett Creamery is holding a cheesemaking class Sunday, Nov. 15, from 9 to 3 at Blackstone Caterers on John Clarke Road in Middletown. You'll learn about milk chemistry, cheese identification, wine and cheese pairings, cheese making and affinage - that's the refining of a cheese.
